So many forum posts talk about how Elena's Fortune is pure bank with a Booze Distillery. However, I've built one three times now, moving it further and further away from the core of the sector, and still, within about a half-hour realtime of it going live, an Argon Centaur will come in and just start blasting the hub.

How do I get the police to leave it alone so it can be as successful as indicated?

In T.C. you need to build a booze fac. in in ether a unk sec or something with no laws.
Try building it in one sec north.

Which forum are you reading? It's a well known and discussed fact that you can't build booze fabs in populated space :o Try Pirate territory, as Scott suggests, or find an unknown sector. You can also get away with building them in Terran or Goner space, as the factories are not illegal there.
